Honey Cake

 

The ultimate recipe for Russia’s famous Honey Cake or Medovik. 

Twelve layers of soft, caramelized honey cakes with light yogurt cream in between. It is decadent, beautiful and absolutly delicious. 

You need to try it ! 




Ingredients: 
  • 200 grams butter ( 1 and 1/2 stick)
  • 200 grams honey
  • 200 grams sugar ( 3/4 cup )
  • 1 tsp baking soda
  • 4 medium eggs
  • 800 grams flour ( 5 and 1/3 cup )
  • 800 ml greek yogurt
  • 250 grams icing sugar
  • 1 tsp vanilla extract
Instructions:
  1.  In a tall sauce pan over low to medium heat combine butter, sugar, honey and salt. Bring mixture to a simmer and after one minute add the baking soda. Wait until the mixture becomes golden brown.
  2. Take it off the heat and allow to cool for 10 minutes. Add one egg at a time, whisking constantly. Add the dry ingredients and stir until everything combines.
  3. Refrigerate the dough for 30 minutes. Cut out the dough into 12 small dough pieces.
  4. Roll out each dough and poke holles into each cake layer. Bake each cake layer in a preheated oven at 160°C ( 320°F) for 5-7 minutes. Allow to cool completely.
  5. In a large bowl with hand whisk combine together the greek yogurt, icing sugar and vanilla extract.
  6. once the cake layers are cooled you can assamble the cake. Spread about 3 tbsp of cream on one layer , stack the second layer on top and repeat until you have 12 layers.
  7. Spread extra cream on top and sides and sprinkle left over cake crumbs on top and sides. Refrigerate the cake over night ! Unbelievably delicious!
